This recipe is a bit non-traditional and minimalist: it is how I remember the Alfalfa dish. I think of it more as salad than stew. I usually plate the dish- layering rice, beans, peppers, cheese- and serve with hot sauce on the side. But for New Year's it's a lot easier to let folks put it together however they like.
Ingredients #
- Black eyed peas (Chora)
- Bell peppers, diced.
- Sharp white cheddar cheese, shredded.
- Rice- basmati or brown
- Garnishes - like sliced onions, tomatoes, green onion, Frank's hot sauce.

Prepare the black eyed peas. Nothing fancy required here: if they are canned, just warm them up. If dry, do a 1hr quick soak- then add some salt and simmer for 90m.

Prepare the rice.

Prepare peppers. Use raw, or parboil them.

Layer cooked rice, beans, peppers and cheese. Garnish and serve with hot sauce.
